I have purchased modelling chocolate or cocoform, as it commonly called in the cake decorating shops, but wanted to experiment with a recipe and try to make my own.
It only requires 2 ingredients to make this versatile modelling material that tastes so much more delicious than sugar paste.
You will need:
4 ounces white chocolate
1 and a 1/2 ounces light corn syrup
First, place a heatproof bowl over a pan of simmering water and place the broken up white chocolate into the bowl
Leave to melt and stir until smooth and remove from the heat
Leave this to cool.
Whilst you are waiting, put the corn syrup into a saucepan and bring to the boil, once it bubbles remove from the heat and pour over the cooled melted chocolate and stir until it forms a paste like consistency
You can then pop this into some clingfilm and leave in the fridge for an hour or so to set
Once set you can slice it into smaller pieces and store wrapped in clingfilm and place into an airtight container.

I experimented with the chocolate and made chocolate roses
I also added food colouring gels and got lovely results
And had a little play around with some designs I had floating around in my head for a while….
…..a tattoo inspired design, would look lovely on cookies but from this I could easily design a lovely cake around this style and theme.
